White Eggplant – Turning Yellow
Q: This summer we planted two new white eggplant varieties. Towards late summer one of them started to bear yellow eggplants. The color is so beautiful and bright. Do you know what may have caused it to become so bright?
A: Perhaps it had something to do with the maturity of the fruit. White eggplant turns yellow when fully mature; the growth of your plant must have been accelerated somehow.
