The “Heat” In A Pepper – Where Does It Come From
Q: Does the “heat” of a pepper come from the seeds?
A: Many people believe the seeds are the hottest part of a pepper but that’s not correct. The most pungent parts are in the tissues around the seeds. The seeds themselves have a low content of capsaicin. That’s my translation of this lovely sentence: ”Within the pepper fruit, capsaicinoids mainly accumulate along the epidermal cells of the interlocular septum, which defines the fruit locules and is derived from the tissue connecting the placenta to the pericarp.”
